Made in the manner of Finocchiona IGP typical of Chianti, it is a salami seasoned with various spices including fennel and then soaked in red wine. It is larger than salami, weighs about 1 kg and has 2 months of maturation. It still remains softer than salami, has a sweet, fresh and aromatic flavor, is wrapped in casing (not edible), slices well with a slicing machine, but can also be sliced with a knife.
